Downeast Blueberry Pie

Use your favorite recipe for a two crust, 9-inch pie. Preheat oven to 375. Place a baking sheet on the bottom of oven and position rack in the center.

4 cups fresh blueberries
1 cup pure Maine Maple Syrup
2 tbsp corn starch
4 tbsp quick tapioca
1/8 tsp salt
1/4 cup fresh lemon juice

Combine the above items with a couple of gentle stirs and let stand for 15 minutes. Put the first layer of pastry in place in the pie pan. Pour filling in and prepare the top pastry. Fold over and crimp the edge. Cut several slits in the top crust. Bake about an hour -- juices will bubble thickly and crust to a golden brown.

Apple-Cranberry Maple Side Dish Select is a microwaveable two cup size dish. Dice two medium apples, add 1/2 cup of fresh cranberries and 1/4 cup of Pure Maine Maple Syrup. Cover dish with plastic or other top. Cook at MEDIUM for 8 to 10 minutes.

Maine Maple Syrup also enhances flavors, and/or textures without becoming dominant when used in smaller amounts -- such as in Stir Fry. A couple of tbs added toward the end of sauteing, breads and rolls -- substitute Maine Maple Syrup for other sugars (you may need to lessen liquids accordingly.)

Pure Maine Maple Syrup contains a number of minerals and micro-nutrients that make it a "standout" naturally healthy product.

Maine Maple Pudding (Cake)

Combine these three in a saucepan and heat until the butter is melted. Pour heated liquid over batter and bake about 45 minutes -- until cake is lightly browned. Cool briefly. Serve with whipped cream.
